DUSTY DINNERS with SUZIE BAKOS on FRIDAY 24TH OCTOBER
Next up with have the amazing Suzie Bakos in the bakery on Friday 24th October.
Suzie brings her Iraqi heritage and a deep love of spice to the bakery. Creating modern, vibrant dishes that are full of flavour and soul. She is the founder of a cult hot sauce brand and is all about celebrating generosity, seasonality and joyful eating.
This menu is on fire…
Starter
Samoon
Labneh topped with fennel, apple, sultanas, hot honey nuts, herbs and chilli oil
Mum’s famous pickles — a selection of homemade ferments, such as cabbage, beetroot, turnip, ginger and garlic
Kubba haleb — signature Iraqi deep fried rice & beef or mushroom dumplings with a tomato, pickled mango & onion salad
Mains
Lamb shank or spiced roasted butternut squash (VG). Served with chickpeas and a tomato & noomi Basra (dehydrated lime) sauce
Timman Bagilla — fragrant fava bean and dill rice
Dessert
Layali Lubnan — a creamy semolina pudding topped with pistachio, rose and syrup
Unfortunately, we can not cater for dietary requirements. The menu is halal.
Her menu presents classic Iraqi dishes and ingredients while nodding to the nostalgic recipes chef Suzie Bakos grew up on from neighbouring Middle Eastern countries, including Timman Bagilla and Layali Lubnan.
Grab your pals, pull up your sleeves, this is going to something very special.
Two sittings 6pm - 8.00pm and 8.30pm - 10.30pm
£60 per head (plus Eventbrite booking fee)

Next up, we have the only guy who’s ordering as much Shipton Mill Flour as us this side of Dalston…TOM’S PASTA.
If you know Tom, you know lasagne is a big part of his story. It’s only right we celebrate the night with not one but TWO never seen before LASAGNE SPECIALS. Tom has even rolled DK dough into every course 💪🏼
Bring your appetite, bring your gang, it’s gunna be an ‘I was there the night when…’ moment. Swear!

A bit about Tom’s:
In 2019, Tom’s dad told him to get a hobby, so he did. He bought a pasta roller, and quickly became obsessed. He thought about all kinds of pasta, but decided on lasagne - something that takes time, something most people love, but don’t bother making themselves.
As London locked down, Tom borrowed a cargo bike, filled it with oven-ready trays and hit the road. Fast forward to 2025, in a Hackney Downs courtyard you’ll find Tom and his team of grafters, the smell of lasagne and piles of parmesan.
Tom is a regular at the bakery so having him here is super special for us. Thank you Tom (hand shake emoji)
